1 pound spicy sausage
4 medium potatoes, diced
1 onion, chopped
3 cloves garlic, minced
4 cups chicken broth
1 cup heavy cream
1 tablespoon olive oil
1 teaspoon paprika
Salt and pepper to taste
In a large pot, heat the olive oil over medium heat. Add the sausage and cook until browned, breaking it up with a spoon, about 5-7 minutes.
Add the chopped onion and minced garlic to the pot. Sauté for another 3 minutes until the onion is translucent.
Stir in the diced potatoes, paprika, salt, and pepper. Mix well.
Pour in the chicken broth. Bring to a boil, then reduce the heat and simmer for about 20 minutes until the potatoes are tender.
Gradually add the heavy cream, stirring to combine. Allow to simmer for another 5 minutes.
Taste and adjust seasonings as needed.
Ladle into bowls and enjoy.
