1 lb ground beef
1 cup diced potatoes
1 cup diced carrots
1 small onion, diced
2 cups beef broth
1 cup shredded cheddar cheese
1 cup milk or cream
1 tablespoon Worcestershire sauce
Salt and pepper to taste
Brown the Meat: In a skillet, brown the ground beef over medium-high heat until fully cooked. Drain excess fat and set aside.
Prepare Vegetables: While the meat is browning, chop your potatoes, carrots, and onions. This will save you time when assembling your soup.
Layer Ingredients in Slow Cooker: Place the browned beef in the slow cooker. Then, layer in the diced potatoes, carrots, and onions.
Mix in Liquid: Pour in the beef broth and Worcestershire sauce. Stir the ingredients to combine.
Season: Add salt and pepper to taste. Feel free to add your favorite seasonings or herbs for more flavor.
Cook: Cover and cook on low for 6-8 hours or high for 3-4 hours until the vegetables are tender.
Add Dairy: About 30 minutes before serving, stir in the milk or cream and shredded cheese until melted and incorporated.
Serve: Once everything is heated through, garnish with additional cheese or chopped green onions if desired, and enjoy your soup!
