1 lb ground turkey
1 cup chopped carrots
1 cup chopped celery
1 cup diced tomatoes (canned or fresh)
4 cups low-sodium chicken broth
1 cup chopped spinach or kale
2 cloves garlic, minced
1 tsp dried oregano
Salt and pepper to taste
Prepare the turkey: In a large pot over medium heat, add a splash of olive oil and brown the ground turkey, breaking it into small pieces with a spatula. Cook until no longer pink.
Add vegetables: Stir in chopped carrots, celery, and minced garlic to the pot. Sauté for about 5 minutes, or until the vegetables start to soften.
Add liquids: Pour in the diced tomatoes and chicken broth. Bring to a gentle boil.
Season: Add dried oregano, salt, and pepper. Stir to combine, then reduce heat and let it simmer for 20-30 minutes, allowing flavors to meld.
Add greens: Just before serving, stir in the chopped spinach or kale, allowing them to wilt into the soup for an extra nutritional boost.
Adjust seasoning: Taste and adjust seasoning as necessary. A squeeze of fresh lemon juice can brighten up the flavors remarkably!
