1 package chocolate eclair dessert shells (about 12 shells)
8 oz cream cheese, softened
1 cup powdered sugar
2 cups Cool Whip or whipped cream
1 cup caramel sauce
2–3 medium fresh apples, sliced
In a mixing bowl, beat cream cheese with powdered sugar until smooth. Gently fold in Cool Whip or whipped cream.
In a rectangular dish, place a layer of chocolate eclair dessert shells at the bottom.
Spread half of the cream cheese filling evenly over the eclair shells.
Distribute half of the sliced apples over the cream layer followed by a drizzle of caramel sauce.
Add a second layer of eclair shells, followed by the remaining cream cheese filling, apple slices, and another drizzle of caramel sauce.
Cover the dish and chill in the refrigerator for at least 4 hours, preferably overnight.
Before serving, drizzle additional caramel sauce over the top. Cut into squares and enjoy.
