2 3/4 cups all-purpose flour
1 tsp baking soda
2 tsp cream of tartar
1 cup unsalted butter, softened
1 1/2 cups granulated sugar
1/2 cup maple syrup
2 large eggs
1 tsp vanilla extract
1 tbsp ground cinnamon
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, whisk together the flour, baking soda, cream of tartar, and cinnamon. Set aside.
In another bowl, cream the softened butter, granulated sugar, and maple syrup together until light and fluffy.
Beat in the eggs one at a time and then add the vanilla extract, mixing well after each addition.
Gradually add the dry ingredients to the wet mixture, mixing just until combined.
Cover the dough and refrigerate it for at least 30 minutes to ensure a chewy texture.
Scoop tablespoon-sized balls of dough and roll them in a mixture of sugar and cinnamon.
Place the dough balls on the prepared baking sheet and bake for 10-12 minutes, or until lightly golden. Remember, they will continue to cook out of the oven!
Allow to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
