2 cups all-purpose flour
1 cup sugar
2 teaspoons baking powder
1 teaspoon baking soda
2 teaspoons cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon ginger
1 cup pumpkin puree
1/2 cup vegetable oil
2 large eggs
Preheat your oven to 350°F (175°C).
Grease and flour a 9×13 inch baking dish.
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and ginger.
In another bowl, beat together the pumpkin puree, oil, and eggs until well combined.
Gradually add the wet ingredients to the dry ingredients stirring until just combined.
Pour the batter into the prepared baking dish, spreading evenly.
In a small bowl, mix sugar, flour, and butter to create a crumbly topping and sprinkle it over the batter.
Bake for about 25 to 30 minutes until a toothpick inserted comes out clean.
Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
